Eat Greens with Greenista Guest Latham

We are all concerned with living well at the least expense to the environment, but how do we make sure we are not only eco-conscious but healthy-lifestyle conscious as well? I’m Latham Thomas and I’m the founder of Tender Shoots Wellness, a boutique holistic lifestyle practice that serves women offering green culinary services, nutritional counseling, and yoga. I’m a single mother of a 7-year-old-boy and we live in the heart of the Green Apple, New York City. I’m a new addition to the Greenista team and I’m going to share some savvy tips on how to live your very best!

Holistic living means to live in balance with all components of our life … relationships, career, diet, fitness, passions, and the ambient environment. Here is one way to live an eco existence:

Get your green on! Literally speaking. Try bulking up on more upward-reaching leafy greens like kale, collard, arugula, and mizuna. Our ancient ancestors would eat up to 6 pounds of leaves per day! Can you imagine eating a grocery bag full of greens daily? Few of us even eat the minimum USDA requirement of 3 cups of leafy greens per week. Dark green leafy vegetables contain calorie-for-calorie the most concentrated source of nutrition of any food. They are a rich source of minerals (including iron, calcium, potassium, and magnesium) and vitamins including vitamins K, C, E, and many of the B vitamins. They also provide a variety of phyto-nutrients which protect our cells from damage and our eyes from age-related problems. Dark green leaves even contain small amounts of Omega 3 fats. They help to regulate blood sugar, break down fats, and cleanse the blood. Chomp away!
